Easy Peezy Parmesan Fried Zucchini is the delicious, buttery, crispy, and favorite way to eat zucchini. This has become a summer staple in our house.
Simple, easy, and just a couple ingredients.
One large zucchini, sliced 1/4 or less thick
Vegetable oil, in your deep fryer or skillet
4 eggs whisked
3 cups breadcrumbs
1/4 cup parmesan cheese
jarred marinara sauce, warmed
In separate bowls, place eggs, breadcrumbs. Dredge sliced zucchini in egg bath, then coat both sides well in bread crumbs. (Yes it's that easy).
Get your deep fryer to the right temp or you can use a skillet with about 1/2 inch of vegetable oil. Medium to high heat at first, you'll probably have to turn down once oil gets hot.
Fry to golden brown. Deep fryer is 6 minutes. Pan, 3 minutes each side. Work in small batches so they have room to crisp.
Place on plate lined with paper towels to absorb excess oil.
Sprinkle with a little flaky salt and dash of parmesan cheese on top and voila!
Serve with marinara (yes from a jar, don't make this difficult) sauce, warmed.
